Instructions
Combine pomegranate and maple syrup in a pot over medium heat. Reduce by 50%. Chill.
In a blender, combine pomegranate maple reduction, vinegar, Dijon mustard and salt. Blend until combined.
With blender still running, stream in canola oil slowly until dressing is emulsified.
