Ingredients
- 2 cups Iceberg lettuce chopped
- 2 cups Romaine lettuce chopped
- 1/4 cup carrots matchstick
- 1/4 cup purple cabbage chopped
- ¼ cup short grain white rice calrose, dry
- 4 tbsp green onion sliced thin
- ½ cup edamame shelled, thawed
- ½ cup cucumbers diced
- ½ ea avocados diced
- ¼ sheet nori diced or shredded into small pieces
- 2 tsp sesame seeds toasted

Instructions
- Cook rice according to package directions. You should have about ½ cup cooked. Chill for assembly.
- Prepare all ingredients according to cut size.
- Place all ingredients in a bowl and toss with dressing until well mixed.
- Divide into individual servings and enjoy!
- Pair with your favorite dressing, we recommend a sesame ginger vinaigrette.
