Ingredients
- 1 Tbsp Dijon mustard
- 1/4 cup apple cider vinegar
- 2 Tbsp maple syrup
- 1/3 cup pomegranate juice
- 1/3 cup canola oil
- 1/8 tsp salt

Instructions
- Combine pomegranate and maple syrup in a pot over medium heat. Reduce by 50%. Chill.
- In a blender, combine pomegranate maple reduction, vinegar, Dijon mustard and salt. Blend until combined.
- With blender still running, stream in canola oil slowly until dressing is emulsified.
