Ingredients
- 2 each orange
- 2 tsp fresh garlic chopped
- 1/4 cup shallots chopped
- 2 tsp chili powder
- 1/4 cup canola oil
- 1 lb boneless skinless chicken breast raw
- 1 cup pineapple cubed
- 1/4 tsp salt
- 1/4 tsp ground black pepper

Instructions
- Squeeze orange and reserve juice. Chop orange peel/pulp into 1" pieces. Combine orange juice, orange pieces, garlic, shallots, chili powder, and oil to make marinade. Cut chicken into 1" pieces and toss with marinade. Cover and refrigerate for at least one hour (do not marinate longer than four hours). Preheat grill to 400F degrees.
- Alternate chicken & pineapple pieces on each skewer. Season with salt and pepper then grill to an internal temperature of 165F degrees.
