Ingredients
- 4 cup water
- 2 tsp canola oil
- 5 oz soba noodles dry
- 1/2 tsp kosher salt
- 1 Tbsp lime juice
- 3 tsp orange juice
- 2 tsp sesame oil
- 2 tsp canola oil
- 1 Tbsp pre-toasted sesame seeds
- 1/2 cup kimchi cabbage
- 1/2 cup English cucumbers diced

Instructions
- Bring water to a boil, add first listed oil and soba noodles and simmer for 5 minutes, stirring occasionally to separate noodles. Remove from heat and strain, chill with cold water, drain off excess water and set aside.
- In a bowl stir together salt, lime juice, orange juice, sesame oil, second listed oil and sesame seeds.
- Roughly chop kimchi. Toss soba noodles with dressing, kimchi and cucumber until evenly mixed. Serve.
