Ingredients
- 7 oz. potatoes peeled and diced
- 1 Tbsp canola oil
- 5 oz carrots diced diagonally
- 3 oz yellow onion sliced
- 2 tsp fresh ginger minced
- 3/4 tsp fresh garlic peeled and minced
- 1/2 tsp ground cumin
- 1/4 tsp turmeric
- 7 oz green cabbage sliced
- 1/8 tsp ground black pepper

Instructions
- Steam potatoes until they begin to soften, about 10 minutes.
- Meanwhile, heat oil in a sauté pan. Sauté carrots and onions until they begin to soften, about 5 minutes.Stir in ginger, garlic, cumin and turmeric. Cook until fragrant, about 1 minute.Stir in cabbage, salt, pepper and par-cooked potatoes. Cook until cabbage and potatoes are tender, about 5 more minutes.
