Ingredients
- 2 1/4 cup almond flour
- 1 tsp salt
- 4 each lemon
- 4 Tbsp honey
- 2 tsp pure vanilla extract
- 5 Tbsp coconut oil
- 1/2 cup shredded unsweetened coconut

Instructions
- In a large stainless steel bowl, combine almond flour and salt. Juice lemons and zest one. In a separate large stainless steel bowl, combine honey, lemon juice, lemon zest, and vanilla extract.
- Using an electric mixer, slowly add the wet ingredients, excluding coconut oil, to the dry ingredients until fully incorporated. Slowly add coconut oil to mixture.Using a 1oz ice cream scoop, portion out mixture. Roll on coconut flakes. Refrigerate until ready to eat.
